Tortilla de Pascua (Hamapalooza #3)

I've been on a bit of a Spanish tortilla kick this past year, as you know.  This Easter week variation was truly fun...  And, of course, it also happened to be Shakespeare's 450th Birthday!

In an 8-inch non-stick skillet, I spread out the remaining pieces of the potato gratin from Easter. Then I scattered about a cup of diced ham on top.  I poured 5 beaten eggs on top and jiggled the pan so the eggs slithered their way into all available spaces...

A little salt, pepper, and smoked paprika on top... Then I cooked it on the stove at medium heat until it started to set.  A little more jiggling - and lifting the edges with a spatula to allow the raw egg to slide under - then a sprinkling of Parmesan and a few seconds under the broiler.

With a bright vinegar-y arugula salad...  Not for one moment did this taste like a reheated Easter meal!

And for those keeping score...

That's three full meals!  So the cost of the ham is now down to less than $7 per meal for two... and I have only just begun!!!
