Colcannon

With family names like McCann, Kavanagh, Shannon, McCullough, and O'Gara, the fact that I like colcannon should not come as a big surprise.  But I think this wonderful comfort food needs to be known by a circle wider than the Irish Sea...

It's so simple and so good, I've been known to make it a meal all by itself.  Just shred some plain cabbage, and steam it until it begins to get soft (but NOT smelly!).  Then fold it into mashed potatoes, add a lot of chopped chives, some salt and pepper... and, if you have no cholesterol issues... shape it into a Close Encounters volcano and put a few tablespoons of butter into the crater to melt...

You can also make this with kale instead of cabbage... and there will be the usual fights about what to call it and what recipe is the true one!  I say, ignore all of that...

The song says, Sure Ireland must be heaven...

But I'm voting for colcannon.
